Pale yellow in colour with green and golden highlights. The first smell is discreet with herbaceous hints (nettle, tomato leaves, and menthol). Then the nose reveals notes of elder blossom, citronella, and thyme. Frank in attack, the palate refreshes with its acidulous balance where lemon and grapefruit prevail. On the finish, notes of pears in syrup. Try a perfect marriage of flavours by pairing white Sancerre and Crottin de Chavignol goat cheese.
From an 11 hectare vineyard with vines averaging 25 years in age. Terroir is calcareous clay soil, known as "terres blanches". Pressing is done at low pressures to extract juices which are as clear as possible. The juice is cold settled during 24-48 hours. After alcoholic fermentation, the wines are racked and maintained on fine lees to gain fullness and roundness.
